First Glance: Elegant, Flinty, Citrus, Long Finish
Fermented in stainless steel at a low temperature for 16 days to retain freshness and vibrancy. No malolactic conversion was carried out. The wine matured on fine lees in stainless steel for 12 months to build texture and opulence. Lightly filtered before bottling, and spending a further 6 months in bottle before release.
Bright straw yellow, with a smokey flinty nose. Aromas of citrus and wildflowers flow through. The palate is creamy and elegant, with great freshness and minerality. The finish is dry with substantial length.
It goes well with all fish-based dishes but it can also accompany the tastiest white meats very well. Excellent with vegetable-based risottos, with truffles and with medium-aged cheeses.
