First Glance: Elegant and crisp; zesty with aromatic citrus and grapefruit flavours.
The Wine:
Vinified from three separate parcels, picked several weeks apart & from three different vineyard blocks for diversity of flavours. The juices were highly clarified following pressing and cool fermented separately with several different strains of aromatic yeast. Post ferment the wines were racked off lees, stabilised and prepared for bottling.
With a pale straw colour, stone fruit aromatics jump from the glass. Elegance and zest hit the palate with notes of honeysuckle and granny smith apples, culminated within a lengthy citrus acidity.
