The Wine:
From the Willsmore Vineyard in Piccadilly, planted on sandy loam over sandstone and soft red rock. Hand harvested and sorted in the vineyard, fully destemmed retaining 50% whole berries, and naturally fermented in open top stainless steel, hand plunged twice daily. Aged for 10 months in 2000L Slovenian oak foudre, then another 6 months in stainless steel before bottling.
Pinot… but not overdone – delicate fruit, earthy and soft tannins.
