The Wine:
Whole bunch pressed on a slow and gentle press cycle before being transferred to the barrel with some solids. Wild yeast fermentation began some days later in two old french barriques. Sulphur was added late - winter after a small malo, some generosity to balance that quivering acid. There was minimal batonnage before the wine was left to settle. After 9 months in barrel on full solids the wine was carefully racked for the first time before being left to settle in the tank for a further 4 weeks.
Citrus rind, cucumber and jasmine, a touch of richness from time in barrel, refreshing acidity.
