The Wine:
A short maceration on skins to enhance aroma and flavour compounds was followed by gentle pressing. The free run, characterized by purity and freshness, was fermented in stainless steel tanks at a cool temperature to capture its delicate nature. The pressings, a more structural component, were fermented and aged for a short period in old oak barrels to enhance texture, body and weight without imparting much oak flavour. The two components were later combined to create the final blend. The wine was bottled in the late winter months just in time for spring drinking.
The nose is highly aromatic and complex, delivering notes of fresh cut pear, honeydew melon, blushed peach skin, lychee fruit, musk and a hint of ginger. Rich and textured, balanced by refreshing acidity. Flavours of red apple, pear, lychee and juicy nectarine. Subtle oak and spicy finish.
