The Wine:
At Domaine Tempier, grapes from different vineyards are skillfully blended to create this wine, made up of between 70 and 75% Mourvèdre (depending on the year) combined with Grenache, Cinsault and a hint (2%) of old Carignan.
Clusters are hand-selected in the vineyard and in the cellar; de-stemmed, crushed and put into concrete vats for 3 to 4 weeks to ferment naturally with indigenous yeasts. Elevage is for 18 months in large old foudres
