The Wine:
This selection of “younger” vines (on average, 50 years old; in contrast to the “vieilles vignes” selection, which averages a century per vine) delivers all the depth and concentration of Vincent’s older-vine wine with an added energy and verve on the palate. Still, it tastes like a baby Montrachet anyway you slice it. Exceptional.
‘Le Meix Cadot’ is made up of three lieu-dits: ‘Le Meix Cadot,’ ‘La Chaume’ and ‘La Bergerie.’ (A “meix” means farmland; Cadot was probably the name of the farm’s owner.) All face east; the plots are particularly sunny and ripen early. Vines planted in 1975, on soils that mix limestone and clay.
Hand-harvested, whole bunch pressed then lees settled for 48 hours. Fermented with indigenous yeasts in French oak barrels (20% new, Chassin). Aged in barrel 12 months, then six months in tank. Bottled unfined and unfiltered; all actions follow the lunar calendar.
Aromas of lemon zest, light pineapple, wildflowers. Fresh and layered, with great texture.
