The Wine:
Kevin John wanted to improve the breed and these small batches are made as an experimental series to make the best chardonnay. The 2021 Legacy Series Fruit Day Kevin John Chardonnay is an artisanal wine, hand harvested on a biodynamic fruit day during the 2021 harvest. After hand sorting these bunches were placed in amphora for two days skin contact, before pressing into 50% new puncheons to ferment, then and resting in oak for 8 months before bottling, with no fining or filtration.

Aromas of honeycomb, ginger, gardenia, honeysuckle, lime, lemon. The palate is full of peaches and cream, vanilla, ginger, orange, honey, oregano, river stone. Very tightly wound, this young wine is taken on a journey through the palate, travelling with speed to give great length and persistence of flavour. With no fining or filtration it has great depth of flavour and complexity.

"Golden colour. Honey and ginger crème brûlée, lime and peach, a white flower and aniseed perfume, nutty oak in tow. It’s fleshy, rich and full in flavour, more ample in flavour than the Flower Day, and more saline and umami with it, peppery/dusty texture, chalky and savoury on a finish that’s very long, and packed with burnt orange and grilled nuts. Terrific. I reckon this will roll out further with a little more time in bottle."
