Hand picked and brought directly to the winery. A combination of crushed and de stemmed fruit went directly to open fermenters and cold soak occurred for around 5-7 days. Moderate fermentation with neutral yeasts, hand plunged throughout, then pressed when dry. Settled for around 3-4 weeks prior to racking to barrel for 24 months. Blended and bottled September 2010.
Blackcurrant, black cherry and cedar combine with edges of black olive to present a magnificent, aged release wine. The concentrated fruit profile leans to black, rather than red fruit, with an elegant, fine palate providing integrated, highly quality French oak. There is liquorice root and baked blood plum, with the structured, fine tannin so typical of our gravel dominant soils. An age worthy pleasure.
