The Wine:
The aromatic profile is generous and joyful. Dark cherry, plum compote and blackberry mingle with mocha, cocoa powder and Christmas spice. Undertones of cracked pepper, star anise and a gentle earthy smokiness echo the cool evenings and mineral soils of Great Western. As it opens, hints of violet, clove and sweet baking spices deepen the bouquet.
The palate delivers the best of both worlds: rich Shiraz fruit wrapped in elegant sparkling finesse. Juicy black fruits burst across a soft, velvety mousse before settling into flavours of dark chocolate, mulberry, spice cake and a touch of savoury earth. Fine tannins frame the wine without heaviness, while bright acidity brings lift and freshness. The finish is long, warming and beautifully balanced with lingering berries, spice and a gentle sweetness that never overwhelms.
