Grapes sourced from 3 vineyard sites across the Upper and Lower Yarra Valley.
Grapes are hand picked with the majority sent to press immediately. A large amount of the coarser "press wine" is retained in the final blend.
A small portion of grapes are kept on skins as whole bunches, and trodden over a 12 day period. All this is done to maximize texture and give a phenolic kick to the final wine.
A short rest in neutral oak, wild yeast fermentation, no filtering and very moderate sulphur addition, almost goes without saying.
Not complicated to drink, but a thoughtful expression of the grape to be sure.

"Whole bunch pressed, heads to old barrels.
Cool and refreshing style with a little extra under the hood. Lightly powdery in texture, some faint oatmeal-nuttiness, dry finish and a good squirt of refreshing nashi pear character. Easy to like. Go forth."
