The Wine:
100% whole bunch pressed to stainless steel (this is vintage dependant – we often use a mix of crushed fruit & whole bunches). Gravity settled in tank prior to racking and inoculation with PDM yeast. Cool fermentation to dry in 100% stainless steel, with approximately 6 weeks on lees post fermentation. The wine is filtered in preparation for bottling as a single cuvée to ensure integrity and consistency of product. Bottled September 2017. Screwcap closure.
Bright in the glass, the calciferous nature of the soils on which this wine grows is unmistakably evident. Lemon curd, custard apple, lime and an omnipresent shell-like character are all there. Clean definition through the palate provides depth of flavour, balance and an underlying power throughout. There is freshness here too, which in a 7 year old wine is a pleasure to see. The wonderful palate length is aided by balanced, soft acidity with the amalgam of flavours lingering throughout the mineral backbone. A thrilling wine.
