A prolific producer, William Fevre owns and impressive 78 hectares of land, with significant holdings of both Premier Cru and Grand Cru vineyard plots. Farming methods are organic and the domaine has obtained the "Haute Valeur Environnementale” (HVE) status, the highest level of environmental certification in France. All fruit here is hand-picked for quality control.

Mont de Milieu sits at the southern tip of the right-bank strech of Premier Crus in Chablis. It is a smaller, compact terroir with an almost strictly south exposure, and often makes wines of powerful concentration and riper fruit. In the warm 2018 vintage, this is a powerful interpretation of Chablis.
Vinification for the Premier Crus is relatively consistent at this address, with 50% of the wine given a 13-14 month elevage in neutral oak, including 5-6 months on fine lees. The remainder going into stainless steel.

As of 2009, this is a domaine wine; from a .55 ha parcel A discreet application of wood sets off mildly exotic aromas that are composed of mineral reduction, apricot, white peach and ample Chablis typicity. The very rich, impressively concentrated and much bigger flavors brim with dry extract that imparts a sappy texture to the powerful and muscular finish that flirts with rusticity but doesn't quite cross the line. This too is good stuff.
