The Wine: Countryside Cabernet Sauvignon is a wine that reflects the Clare Valley countryside – think the Aussie outback, dusty, gumtree’s, beautiful and laid back. Fermentation in open head stainless steel for weeks 2 weeks, plunged twice a day then aged in 3000L Slavonian oak foudre for 11 months.
On the nose you get fresh herbs and plums which carry through to the palate, along with blueberries and some subtle red fruits. These are complemented with a touch of earthiness, combined with gentle, velvety tannins. This wine is a happy medium body and not to heavy – perfectly balanced. A great representation of Clare Valley Cabernet.
