The Wine:
Shiraz and Malbec are de-stemmed (Cabernet is crushed) to open fermenters. Pumped over up to 4 times daily during peak fermentation. Drained & pressed after 7 to 10 days on skins, vineyard dependant. Settled for 24 hours before racking to oak for MLF.
This is the great Australian red blend of Shiraz and Cabernet Sauvignon, with a touch of Malbec. The wine displays plum, blackcurrant, chocolate and boysenberry spice. A juicy palate with persistent flavour and smooth velvety tannins. Enjoy with a summer BBQ or slow cooked dishes.
