The Wine:
Pressed and cold settled, racked to neutral oak for a slow 24-day fermentation before being stopped with some residual sugar. Matured in oak for 10-months of full ferment lees.

"Another great Riesling from Chris Jessop, not afraid of texture, ripeness, old oak, lees work and playing with residual sugar in a dry wine. It’s the recipe for a tantalising drink, for sure. Heavy silk texture, bitter yellow skins, glossy lime curd and green grapefruit, pomelo and ginger spice. This is not a sweet, not even off-dry wine, but the sugar does the trick here so well (along with lees and old oak maturation), takes the edge off what otherwise would have been a skeletal and steely acidity and adds depth to that fruity ripeness. Alcohol is unnoticeable as the intensity of flavour handles it tip-top. It’s a beautiful wine, full of character. Very ‘Alsatian’, dare I say it."
