The Wine:
Grapes were destemmed and pressed to 650l ceramic eggs, where natural fermentation commenced after 1-2 days. Vessels were topped up post-ferment and mostly left alone in the cellar for about 11 months, after which MLF was completed and the wine was transferred into 1 x 20hl Stockinger foudre, and topped as needed for 12 months. 

A bone-dry, textural Riesling. A wine that really requires time and a little more patience to reveal the layers of perfume, flavour and persistence.

"Brilliant, vivid riesling of textural nuance, savoury elements, bright, citrusy get-up-and-go with intensity and yet approachability hand-in-hand. It smells and tastes like fresh limes, green apples, halva and green almond with a crackle of minerally zing underlying. Refreshing, but a wine of more depth than regional staples of the variety, with a gentle mellowness appearing. Released right in the zone, thank you. Delicious."
