The Wine:
From 100% certified organic young vines, planted on Portlandian upper Jurassic soils, younger than the Kimmeridgian. Harvested in September, the grapes are pressed and fed by gravity to temperature controlled stainless steel and enamel vessels for fermentation. Aged on fine lees till the end of July, then bottled.
Bright pale color. The nose opens with vibrant citrus notes that are slightly spicy. The palate is fresh, delicately crunchy and tangy, with some richness before a saline finish. This is an exceptional Petit Chablis.
