The Wine:
Destemmed, wild yeast fermented and held on skins for 18 days with frequent plunging and foot stomping. No temperature control. Pressed to 500 litre French oak puncheons (20% new) and left unsulfured for 18 months prior to bottling without fining or filtration.

Bright, fresh red fruit, aniseed, red flower perfume, and fine tannin on a fine acid frame.

"A bright, medium, ruby red. There's lots going on here. Aromas of dark cherries, cherry and sandalwood, dried roses, orange peel and botanicals such as quinine and juniper. The palate is ripe and beautifully brought back into focus by the wine's refreshing acidity and grippy yet fine tannins. Finishes ferrous and long."
