The Wine:
90% whole bunch, wild yeast fermentation and malolactic fermentation. First time fermenting in our open concrete fermenter, foot stomping, hand plunging and gentle pump overs every few days, 34 days on skins before pressing. Free run only used for this wine. Aged in used 2800L Foudre 100% French for 20 months. Wine is left on lees without racking, then bottled unfined & unfiltered with min. SO2 to age for a further 3 years.

"Red fruited, a lift of violet floral character, pot pourri and rose hip tea in the perfume. The palate is red fruited too, a good drawl of that grippy, rosy tea character here too and a cherry juice-meets-cranberry drink powdery tang to finish. All the while, a bergamot and anise note rolls through and the sheath of feathery yet firm tannin guides beautifully. A refreshing feel too. Cracking wine here. Finesse and vitality in spades."
