Seveneves is the other of two labels by Mauricio Ruiz Cantú and Benjamin Caldwell, also proprietors of Somos. Seveneves is focused on classic French varieties, but approached with a bit of the same playful enthusiasm as we see in the Somos wines, and all from a single vineyard in Macclesfield, Adelaide Hills. The vineyard is farmed organically and sits on the south eastern border of the region at 410m altitude, with a higher diurnal shift and drier conditions to the rest of the hills. This allows Ben and Mauricio to craft wines of great freshness and detail. Techniques such as whole-bunch fermentation, carbonic maceration and prolonged skin contact are eagerly applied, but the wines always stay true to variety and the main goal is to bringing out the best in each variety.

This is the more classically styled of the Seven Eves Pinot Gris. Fruit is handpicked and sorted, then gently whole-bunch pressed. Wild ferment on full solids with 25% rested in old French barriques, lees stirred fortnightly.

The Best Cellars View:
A medium weight style of Gris with good intensity, but without coming across as heavy or big. Fine definition of flavour, and well balanced by lively acidity and a fluent texture on the palate. Refreshing and easy to drink, but skillfully dodging the simpleness that sometimes comes with that territory.
