The Wine:
Domaine Servin covers 37 hectares in Chablis, boasting four Grand Crus and six Premier Crus vineyards, and notable village parcels. The domaine is renowned for its detailed approach in and out of the cellar, opting to hand-harvest Grand Crus and select Premier Crus and a proponent for uncloned Chardonnay vines planted at high density for effortless terroir expression.
"Les Pargues" is a Chablis lieu-dit, situated on a ridge between the Montmains and Vosgros Premiers Crus; the Servins believe it to be wrongly left out of the Premier Cru classification in the 1920s and ’30s when the classifications were drawn up - we couldn't agree more!
The "Les Pargues" Chablis is fresh, clean, sleek and succulent and with brilliant acidity. It starts floral with cool herbs, transitioning to lemon, lime, tropical fruits, cream, chalky minerals on the nose and palate with a fine, lengthy finish.
