Hand-picked and mechanically sorted. 100% Destemmed with 50% whole berries. Cold soaked. Open fermenters. Plunged. Wild yeast fermented. No pressings are used in this wine. Kept on lees in 100% older French oak for 11 months. We selected individual barrels showcasing the pedigree of the deep sand, with lifted fragrance, intense fruit expression and fine, gritty, long tannin structure. Not fined.

From Block 31, the highest elevation at 210m, with the deepest sand. Hand-picked, mechanically sorted, 50% whole berries, open-fermented, 21 days on skins, 11 months on lees in French oak. A rainbow of aromas, leading me to abort my first mental description because I'd already run out of breath. (James Halliday)
