A prolific producer, William Fevre owns and impressive 78 hectares of land, with significant holdings of both Premier Cru and Grand Cru vineyard plots. Farming methods are organic and the domaine has obtained the "High Environmental Value” (HVE) status, the highest level of environmental certification in France.
For the straight Chablis, the domaine employs quite classic winemaking. Wines are fermented in steel and likewise aged there for 8-10 months, with a modest 10% raised in older French oak. This coupled with high-quality, mature vine material all amounts to a beautiful textbook example of well measured Chablis.

Domaine wine with 50-year-old vines from a number of vineyards, including north-facing plots underneath Les Lys, north west facing opposite Vaillons and south facing around Troesmes, plus some mineral soils from around Chichée. Intense and driven, you can smell the Kimmeridgian. Great energy and focus. Spice on the finish, precise acidity. Will age for many years. Bottled just before the 2021 harvest.
