Tasting Notes :
This close-planted Mourvèdre vineyard (4545 vines per Hectare) on rich pre-Cambrian soil produced fruit of amazing complexity and length of flavour. Bright and light raspberry red in colour, the perfumed nose of ripe berry fruits, raspberries and layered with dried herbs, amaro and warm spice of garam masala. Savoury turned earth, spice, lifted whole bunch (50%) and a meaty small goods character. Medium bodied, lighter on its feet than most Mourvèdre’s. This wine is all about texture and fine velvet like fine tannins; palate is long, rolling and fresh.

Cured Meats, Pate or Terrine
Mourvèdre has a reputation to be big and rich with severe tannins. However I make this wine very delicately with no pumping or plunging in an effort not to over extract. The whole bunch also softens the tannins, which results in a more savoury delicate style of Mourvèdre, which allows it to be paired well with cured meats, pates and terrines. It also pairs well with slow cooked meats or long slow braises, think veal ragu with rosemary and thyme.

Soft, succulent, slippery and sweet-ish but everything balanced and svelte. Red currants, cranberry and pomegranate, white pepper, faint alpine herb notes. Slides so very pleasingly across the palate. Meaty notes start to emerge. Red cherry and tang to finish. Take time with this, it starts to evolve with interest quite quickly. That flash of fine, feathery texture to tannin is a clincher. Superb stuff. Such a wonderful thing to drink."
