Sangiovese, Shiraz, Grenache & Merlot were crushed, chilled and held cold soaking separately for a short time in the press in order to extract vibrant red berry flavours from the skins. The juices were cold settled and fermented separately prior to careful blending, stabilisation, clarification and bottling. Very slight residual sweetness remains in order to enhance the natural fruit characters and balance the natural acidity borne from a perfect ripening period.
