The Wine:
The harvest is manual in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and then destemmed. The maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are punched twice a day during fermentation. Aging lasts around 18 months in barrels from our cooperage, of which around a third are new.
This deep, aromatic wine is brimming with ripe black and red berry flavours wrapped up in a classic earthy pinot noir perfume. There’s great balance between ripe tannins and concentrated fruit, making it silky and very approachable. If cellaring appeals, give it 5-7 years. The perfect companion to roasted red meats or mild cheeses.
