Channeling the expansive skyline of the Clarksburg area, this Chenin Blanc was fermented in neutral French barrels with ambient yeast and allowed to complete full malolactic conversion. A slightly warmer fermentation and gentle suspension of lees has allowed a depth of fruit flavour and rich mouthfeel. White peach, sweet almond and a refreshingly balanced finish makes this wine a flexible pairing with many foods.
"Pressed whole cluster. Fermented with ambient yeast in stainless steel. Spontaneous malolactic. Aged in stainless steel barrel, neutral barrel and tank until bottling March 2016. Minimal sulfur. 10.7% abv. Vineyard/Region Luchsinger Vineyard, Lake County, California. 500m altitude
Low key green apple, cucumber, fresh cut hay scents, preserved lemon. Juicy in the palate, waxy textured too, mouth-filling but refreshing, lots of flavour, generous in a way but beautiful, fine acidity keeping things so fresh. A wine to contemplate and not drink too cold."
