While less than popular the rustic reds of certain parts of the Languedoc remain an inspiration for me due largely to their powerful expressions of terroir. They are unmistakably marked by their place. The Barossa is blessed with a wealth of old vines, as the Languedoc is, but I can’t help but feel the ripe fruited styles that made it famous have very little soil transfer character in them so I set out to make a more savoury and blended representation. “Carignan” (aka ‘False Carignan’, probably Bonvedro or an old Mourvèdre clone), Syrah, Grenache and Mourvèdre in 20kg crates from Vine Vale were fermented in jarrah hot tubs with whole bunch rates from 100% to 25% and varying lengths of time before being pressed and run to a mix of barriques, hogsheads and Ol’ Stoney – a very old 1100l reconditioned French cask – with the final % blend in it. Wow that was a long sentence! Racked and blended in January ’18 before being bottled down the hill in February. Screwcap. Tim Stock, Winemaker
