The estate Chardonnay is sourced from a south-east facing, granite-rich vineyard in central Yarra Valley. The shallow top soil forces the vines to dig deep for nutrients and water, resulting in wines of structure and balance.

As per usual, the fruit is pressed as whole bunches and fermented with no additions of cultured yeasts. Full Malolactic conversion is completed, and the wine is kept with lees during ageing, with a bit of batonnage to add texture and nuance. Aged in large old oak, to not detract from the pure and crunchy character of the raw material. No fining, no filtration and only a smidge of sulphur addition right before bottling.

An intricate and savoury take on this diverse variety, and one far removed from the big, bold Chardonnays of old. Dare we say, a take more inspired by a European ethos, than a typical Australian one. This plays on acid, texture and grip, more than on fruit weight. This tightly coiled release from the cool 2022 vintage, will evolve and open up over the next many years to come, if you can wait that long.
