Grandson of Etienne Sauzet, one of Burgundy's most famed vignerons, with experience as winemaker at Olivier Leflaive, Jean-Marc is a man of great practice with the talent of someone for whom winemaking runs in his blood. His wines wonderfully display terroir. With richness of flavour yet lightness of touch, they are always a delight to open: particularly in the company of charming Jean-Marc himself or his adult daughter, Lydie, who works alongside him.

The Bourgogne Rouge of the Domaine J.M. Boillot comes from Pinot Noir grapes grown on clay and limestone soils. The approach in the vineyard is respectful and agriculture without chemistry in the vineyard is the approach with which the domaine works. The wine ages for 12-14 months like other reds and the use of new wood for aging is 25/30%.
