Dr Edge Tasmania Pinot Noir is a blend of Derwent Valley (90%) and Tamar Valley (10%) fruit. It's an ethereal Pinot Noir fermented naturally with only two weeks on skins then pressed to oak casks, matured for 9 months and bottled without fining. Medium to long term cellaring will reward.
"90% Derwent Valley and 10% Tamar Valley. Take your time with this one: it’s pretty, and pretty shy.
Fresh raspberry, thyme, lavender and honey, spice and ash, neoprene, blackcurrant and violet. Light in body, again fresh raspberry and cranberry crunch, sappy and perfumed, brick dust tannin, glassy acidity, with a fragrant and pretty red fruited finish of excellent length. So delicate and bony, but very lovely. The devil is in the detail, as it were. Well outside the mainstream, but so worthy. And different."
