Domenica was started in 2012 by Peter Graham, formerly a winemaker at neighbouring Giaconda for 13 years. As it happens, some - a fair bit, of that stardust robbed off on the then young winemaker, who now crafts incredible Chardonnay, sumptuous Shiraz and elegant Nebbiolo, among others, from his own estate and vines.
As with many things at Domenica, the winemaking is delightfully old school, yet the resultant wines are precise and deftly crafted. The Fruit is hand-picked, largely destemmed (around 25% whole bunches with stems included, depending on vintage conditions), and the wine is fermented with indigenous yeasts in open-top concrete vats. Gentle plunging throughout fermentation is carried out by hand, then after fermentation, the wine is basket-pressed off the skins, to be matured for 21 months in 25% new French oak of varying sizes. A sumptuous but elegant Shiraz with a nod to Northern Rhone Syrah for its layers of dark fruit, black pepper and savoury under-current.
