Situated on the western side of the central valley in the Chablis appellation, mid slope facing south-east, Vaillons is one of the more well known premier crus of the region. The domain farms two individual plots here with average ages of about 45 and 75 years, respectively. Generally a very age-worthy release here.

The wine is fermented with natural yeasts and sees long elevage of up to 24 months on lees, with around 30% carried out in neutral oak, the rest in tank.

The most forward nose – quite vibrant. Mineral, direct, I love the dimensions of flavour in this wine. A small grain from the citrus bitters, long too this wine. That’s really excellent, beautifully complex wine.
