A Chardonnay-based sparkling straight from our home site, St Andrews, that’s bright, zippy and playful. Just like pét-nats intend to be. Ripe fruit was whole-bunch pressed and fermented in old barriques for maximum texture, and no sulphur additions were required as the wine remained slinky and sherbet-y for the entire ride. To taste? Think pithy, juicy citrus and herbal tones built on notes of freshly baked sourdough and mouth-watering acidity.
