Husband and wife team, Justin Bubb and Anna Pooley, have been making wine domestically and abroad for over 40 years collectively. While both are engaged as winemakers at Babo and Pooley Wines, respectively, this is their joint venture 'side-hustle' as they like to say. The fruit is sourced from around the Coal River Valley, and the focus is on purity, transparency and sustainability.
The Chardonnay is fermented and raised in a mixture of conical concrete vessels and 25% New French oak puncheons for 7 months. To retain the natural purity and drive of the fruit, only 20% of the wine went through malolactic conversion, the process where tart malic acid is converted to softer and more creamy lactic acid.
A raw and expressive Tassie Chardonnay, with laser-like purity and elegant acid structure, as well as subtle layers of complexity unfolding with time in the glass.
