De-stemmed & crushed to open fermenters, for a short soak. Fermentation peak at 28ºC with pump overs up to 4 times daily. Drained & pressed after 8 to 12 days on skins, settled for 24 hours before racking to oak for MLF. A barrel selection from our best performing vineyards of 2018, racked to blend under gravity to tank prior to bottling.
Layers of floral and fruit flavour, supported by complexity from maturation in French oak with firm lingering tannins. Drinking well now with a vigorous decant or up to 2040.
