The harvest period was relatively stress-free without any adverse conditions such as rain or heat. All of the Semillon cropped well and was in immaculate condition. The grapes were machine picked in the cool of the night before gentle pressing and fermentation in stainless steel tanks. It’s the recipe for a tantalising drink, for sure. Heavy silk texture, bitter yellow skins, glossy lime curd and green grapefruit, pomelo and ginger spice. This is not a sweet, not even off-dry wine, but the sugar does the trick here so well (along with lees and old oak maturation), takes the edge off what otherwise would have been a skeletal and steely acidity and adds depth to that fruity ripeness. Alcohol is unnoticeable as the intensity of flavour handles it tip-top. It’s a beautiful wine, full of character.
