Once harvested, the fruit was placed in the cool room overnight and the following morning bunches were sorted and destemmed with each variety kept separate for fermentation. Following alcoholic fermentation in open fermenters the Cabernet was left on skins for extended maceration which produces fine tannins, essential for the structure and longevity of the wine. After pressing, the wine was transferred to French oak barriques (35% new) for maturation.\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eThe wine shines with vibrant purple hues, the nose wafting with currants, blue fruits, boysenberry and fresh leafy tobacco. Gentle extraction was employed for the duration of the ferment ensuring a wine with full flavour and silky tannins and after 20 days maceration the must was pressed to tank. The wine was racked to French oak barriques and puncheons (20% new) for 11 months before the blend was prepared and bottled without finings. This technique adds texture and mouthfeel to the finished wine. The remaining 80% of the juice underwent a long and cool fermentation in tank to capture varietal freshness after which time the two parcels were blended together.
