In 2012 Theo Coles discovered the Limestone Hills vineyard in Canterbury in the north of New Zealand’s South Island. The Limestone vineyard is close planted, naturally farmed and small, everything Theo was looking for.
The Limestone Hills vineyard is only planted to Pinot Noir, so for Theo to expand his range, he sources fruit from small naturally farmed vineyards throughout the Canterbury region. The Hermit Ram range now includes the skin fermented Sauvignon Blanc and Müller-Thurgau, a field blend rosé and Pinot Noir. This release sees the addition of two new wines, an amphora Pinot’s blend and the Zealandia Pinot Noir.
Theo believes each wine has it’s own unique story to tell, in order to achieve this, all the vines are naturally farmed and the wines are made with the minimal amount of additions. These are wines of depth, complexity, individuality and most importantly drinkability. Truly handmade, artisan wines.
