The fruit was painstakingly hand picked through twice with heavily & moderately Botrytised fruit separated. The level of natural botrytis this year created great definition and concentration. 100% Wholebunch pressed - very slowly - to tank and racked after a short settle. Fermented in stainless steel until the desired level of balance was reached. Fermentation was stopped by chilling and racking off lees.

A fresh bouquet of honeysuckle, apricots and minerals leads to a deliciously lively and finely structured palate of great purity, leading seamlessly to a lingering, chalky finish which is clean and fresh and not cloying.
