The fruit was harvested in the cool of the early morning, gently pressed and the juice separated and cold settled before undergoing a steady fermentation at cold temperatures for two weeks. The resulting wine was then cold and protein stabilized, filtered and bottled in a dry style with seamless residual sugar. The generous fruit concentration and fruit sweetness is just one of its highlights.
The wine shows a great concentration and intensity of passionfruit pulp, stone fruits, ripe citrus and fresh sage with a generous body and texture and precise acidity across the palate. Very drinkable and extremely recommended to have with food.
